Hi. I have a number of herbs, chives, sage, oragano, mint...I see the sage are starting to flower, as are the chives, should I cut them off? I have noticed the chives with the flower are too tough to use, what is the usual method to harvest and use herbs. I would appreciate any helpful hints. Thanks Carol

Hi Carol For the chives - I think the flowers are the best part. They are delicious in salads or mixed into cream cheese, or dips. Just pinch off the flowers, rinse and pull the flower heads apart into individual florets. After the flowers are used up or fade you can cut the off an inch or two above the soil and they will re-grow. I

Hi Carol, Janine is right on both counts.. i just thought I would add that I grow a clump of chives and leave the flowers and a clump that I keep trimmed.. the flowers look nice too.. I chop up my chives as well and throw them in little bags in my freezer, same as my green onions.. nice to have, and freeze so well.
